Huckleberries

Dear Stan;

Huckleberries, what can I do with them, where can I find recipes. Are Honeysuckle, only for the birds, or can I make jelly from the berries. I don't know the name of the bush, but it has light pink flowers, and bright red berries.

Yolanda - What you have are 'vacinnium'... family name for blueberries or huckleberries. We have all kinds at the lake, and they are large blue berries which are early and small red berries which are rather late and the least liked by the bears. I have not come across a recipe for the use of honeysuckle.. even in use by the natives; Cree or Blackfoot of our region. We do however enjoy the huckleberries fresh picked or as a mid winter jam.
